How To Make Brie Eggs Benedict

The Earth completed it’s rotation around the sun which means it is once again April 16, also known as National Eggs Benedict Day In order to commemorate this very special day, we have created a brie cheese eggs benedict. Our eggs benedict combines everything you love about a classic benny with a little extra pizazz.

Eggs benedict has a strong history with many different renditions, however, the most popular version involves Mr. Lemuel Benedict, a lavish upper class man who liked both breakfast and alcohol. A brunch revolutionary as we like to call him, Mr. Benedict crafted this dish whilst being hungry and hungover. So next time you’re in the need of a morning Bloody Mary and an Advil, step into the kitchen and see what masterpiece you can create.

A Classic Vs. A Two Bries Benedict

A classic eggs benedict traditionally incorporates a few staples. The most common traditional benedict includes an English muffin, topped with Canadian bacon, a poached egg, and hollandaise sauce. Many restaurants serve different variations of this classic benedict, such as a California benedict which includes tomato and avocado. As we are from North Jersey, we are not huge fans of Canadian bacon and ask for Taylor ham instead. Some restaurants are even more daring and offer a seafood variation of the classic benedict, most commonly done with either crab or salmon.

In our rendition of the benedict, we left out the fancy fish and avocado, and instead opted for a simple addition: brie cheese. The Two Bries Benedict stays fairly true to the original benedict, with a few delicious upgrades. First, we used fresh sourdough bread as our base rather than an English muffin. The sourdough bread is a bit healthier, and it also pairs very nicely with the flavor of the poached egg.

In addition, we substituted the Canadian Bacon for the aforementioned Taylor ham. If you are reading this recipe from the foreign lands of South Jersey, please save your “pork roll” commentary for another time. On top of the Taylor ham we placed a perfectly poached egg. Next, we laid our homemade hollandaise sauce on top of the egg, covering it like a blanket. Finally, we topped this dish off with the most important ingredient: a slice of softened brie cheese. Altogether, this is truly a breakfast of champions.

The Two Bries Eggs Benedict

This scrumptious egg breakfast recipe is a modern twist on an old classic. Uniquely crafted with a brie cheese topping, this Egg Benedict recipe is a perfect weekend dish poached to perfection.

Ingredients
  

Hollandaise Sauce

  • 3 Egg Yolks
  • 3/4 Cup Unsweetened Yogurt (milk or dairy alternative yogurt)
  • 1 tbsp lemon juice
  • 1 tbsp Dijon Mustard
  • 1/2 tsp Tabasco sauce
  • Pinch salt and pepper

Benedict

  • 4 Eggs poached
  • 2 slices Sourdough Bread
  • 4 slices Taylor Ham
  • 8 slices Brie Cheese

Instructions
 

  • Using the double broiler method (fill a pot 1-2 inches with water and place a metal bowl over it. Turn stove burner to medium heat), add all sauce ingredients. Occasionally stir for 10-12 minutes.
  • Bring a saucepan to medium heat, cut 1 slit halfway into each slice of Taylor Ham, and cook until brown. Using the same pan, add buttered toast and brown each side to your preferred crispiness.
  • While the sauce is cooking, fill a pot halfway with water, bring to a boil and begin poaching your eggs.
  • Add toast, Taylor Ham, poached egg, hollandaise sauce, and 1-2 brie slices per egg onto a plate and serve immediately.
  • Enjoy!

Egg Poaching Tips

If you do your research, you will find there are many different ways to properly poach an egg. We have tried a few of these methods and recommend the following as one of the more simple ways to approach the poach.

  1. Bring half a pot of water to a rolling boil.
    • Optional: Add a tablespoon of white vinegar and a dash of salt to prevent the egg from feathering.
  2. Use a spoon to create a whirlpool and crack the first egg into the middle of the swirling water.
  3. Let the egg sit in the water for roughly 4 minutes.
  4. Carefully take the egg out using a slotted spoon and place atop your bread.
