Easy Mushroom and Brie Grilled Chicken Thighs

Chicken is a kitchen staple as it is a pretty versatile meat and is quite simple to make. However, you may find yourself consistently making the same boring chicken recipes. If your taste buds are beginning to go numb with the repetition, then you have come to the right place. How To Prepare Grilled Brie Chicken Thighs

Contrary to popular belief, a grill is not necessary in order to grill chicken, or any meat for that matter. Grill masters around the world might disagree, but we would be so bold to say that sometimes grilled meat is more delicious when cooked stove top. If you decide to follow our route and use the stove to cook your chicken, we highly recommend you purchase a grill pan. They allow you to cook meat as if on the grill, grill marks and all, but without all the hassle.
Once you have your appliance of choice set up and ready to go, you can begin preparing the chicken. Place all chicken thighs into a large ziplock bag and then start adding your marinade. You can add or delete any of the ingredients we use depending on your specific tastebuds. However, we will argue that Amber’s marinade is ~simply the best~ better than all the rest. Don’t take our word for it though. Follow the recipe below and taste for yourself!
The Recipe
Easy Mushroom and Brie Grilled Chicken Thighs
Ingredients
- 4-8 Skinless + Boneless Chicken Thighs depending on size of chicken and appetites of diners
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic Powder
- 1 tsp Chili Powder
- 1 tbsp Paprika
- 1 tbsp Ground Ginger
- 1 tsp Ground Mustard
- 1 tsp Cayenne Pepper
- 1 tbsp Soy Sauce or Tamari
- 2 tbsp Worcestershire Sauce
- 1 tbsp Italian Dressing
- 2 tbsp Dijon Mustard
- 8 slices Brie Cheese
- 1 package Mushrooms sliced
Instructions
- Put chicken in ziplock bag and combine with all of the spices and condiments.
- Close ziplock bag and shake, ensuring the marinade coats each chicken thigh. Let sit.
- While the chicken continues to marinate, wash the mushrooms and remove the stem. Then slice all of the mushrooms.
- Heat grill pan over medium high heat. Coat the bottom of the pan with either cooking spray, coconut oil, or butter.
- Once pan is heated up, place all chicken thighs onto pan along with the sliced mushrooms.
- Let cook each side, approximately 5 minutes each or until outside is browned and inside is cooked through.
- Turn stove to low heat or turn off. Place brie slices on top of chicken thighs and cover pan with a top. Allow cheese to soften and begin to melt, about 2 minutes.
- Plate the brie topped chicken and mushrooms and dig in.
- Enjoy!
Keep in mind, the spice and condiment measurements provided are a very rough estimate. Feel free to add as much or as little of each as desired. The best part of this marinade is that it also works deliciously for other meats such as filet mignon and lamb chops.
