Easy Tomato Brie Summer Penne Pasta Recipe

It’s that time again: dinner time. You originally planned to make shrimp but as you sit in the kitchen with those little crustaceans staring back at you, you decide against it. Despite the relief of putting the shrimpies back in your freezer, your heart beats an anxious flutter. What will you make now? You don’t have any meat defrosted and you are definitely not going to the grocery store. You turn to your pantry and smile. Nestled neatly upon the second shelf, a box of Penne pasta smiles back at you. You pull out the pasta along with a conglomeration of items from your fridge and get to work. 30 minutes later, you somehow created a masterpiece even Gordon Ramsey would be proud of. Each bite is paradise and so you name it Tomato Brie Summer Penne Pasta.

This dish is a Summer Surprise because it is a whatever-you-have-in-your-house type of pasta. Although, we only recommend experimenting if you are well-versed in a kitchen. If you are new to the cooking game or tend to cook everything in an oven (you know who you are) then we suggest sticking to our recipe. It’s the safest option for all parties involved. Unless, of course, you have an annoying husband and you don’t mind torturing him with a less than ideal dinner concoction. In that case, experiment to your hearts content. Besides, this is 2021, your husband can cook dinner for himself if he doesn’t like it.

We decided to use Penne pasta for this recipe. You see, Penne pasta has little indents on each edge that really encapsulate the magic of the sauce. Just kidding. We chose Penne because, as mentioned, this is a whatever-you-have-in-your-house. And we had Penne pasta. So, Penne pasta it was. Now, technically, you as the reader may choose any pasta shape you want. However, we did title this recipe “Summer Penne Pasta”. And we are the experts here. Therefore, if you are following this recipe, either use Penne pasta or start your own brie blog and make up your own rules.

Ingredients
  

  • 1 tbsp Minced Garlic
  • 1/2 Onion chopped
  • 2 tbsp White Wine
  • 1 Bell Pepper chopped
  • 1 pkg Grape/Cherry Tomatoes halved
  • 1.2 wheel Brie Cheese
  • 3 tbsp Kalamata olives halved
  • 1/2 Avocado smashed
  • 1 tsp Red Pepper Flakes
  • 1 lb Penne Pasta
  • Salt and Pepper to taste
  • Basil for garnish
  • Parmigiano-Reggiano shredded

Instructions
 

  • Bring a pot of water to a boil and cook pasta according to box instructions.
  • While pasta cooks, add garlic and onion to a pan and place over medium heat. Once the onions brown, add wine.
  • Stir in the bell pepper, tomatoes, brie, and olives. Simmer and stir occassionally until the brie is melted in the sauce.
  • Add the avocado as well as the red pepper flakes, salt and pepper.
  • Add cooked pasta to the tomato brie sauce and stir until well combined.
  • Garnish with chopped basil and Parmiggiano-Reggiano.
  • Serve and enjoy!
