Recipe Recommendations

For this pasta recipe, we recommend opting for a smaller pasta shape that can contain the cheesiness. After testing this recipe a few times a few different ways, we have concluded the best pasta is a medium or small shell pasta. The rind is a personal preference whether you want to keep it on or take it off. We like to keep our rind on the brie because it creates some extra cheesy pockets. However, if you prefer all your cheese to be perfectly melted, then you should probably take the rind off.

We have also tried this recipe by using individual single serving ramekins as well as a larger 6-serving dish. If you decide to use ramekins, you are going to want to use a much smaller pasta such as Orzo or Tubettini. Additionally, you are going to want to use a larger size ramekin. In our opinion, using one large serving dish is the way to go. While the ramekins are a fun way to serve dinner, the cheese does not melt and mix as well in such a contained space. This creamy brie mac and cheese takes a classic and makes it classy with only 5 simple ingredients for a dinner the whole family will love.

Ingredients
  

  • 1 wheel Brie Cheese
  • 1 box Small Pasta like shells, elbows, ditalini
  • 3 cloves Garlic
  • 1/4 cup White Wine
  • 3 sprigs Thyme
  • 1 pinch Salt and Pepper to taste

Instructions
 

  • Preheat oven to 400°.
  • Bring a pot of salted water to boil and cook pasta a couple minutes from recommended cook time. Reserve 1/4 cup pasta water.
  • Cut garlic cloves in half and rub the entirety of the baking dish.
  • Cut brie cheese into quarters and distribute evenly on baking dish.
  • Add pasta to dish and season with salt and pepper.
  • Add white wine and reserved pasta water and stir. Top with thyme sprigs.
  • Cover baking dish with foil and cook in oven for 15 minutes, or until the cheese is melted and gooey.
  • Serve and enjoy.
