Amazing Apple And Brie Stuffed Chicken Breasts
This brie stuffed chicken dish is a perfectly balanced explosion of flavors. We used chicken breasts from 1915 Farms. Store-bought chicken will serve this recipe just fine, but we prefer to support a family-owned farm that offers quality free range pasture raised chicken. The flavor of the chicken is unmatched and you know you are receiving fresh meat right from Texas. We cut the chicken and made a pocket for the stuffing. However, you could also butterfly the chicken breasts if you prefer. Or, if you are especially daring, grab some thin sliced breasts and roll them up around the cheesy goodness!
Any brand of brie will work for this recipe, but we prefer to use President Brie. They offer three different wheel sizes, which makes it the perfect option for all brie recipes.
The fun thing about this recipe is that there really is no right or wrong way to make it! You can add or delete any spices and herbs you desire. I recommend a green apple because the tartness adds a nice contrast to the cheesy flavor, but use a red apple if you are feeling daring. As long as you have the brie, this stuffed chicken recipe is sure to satisfy.
Amazing Apple and Brie Stuffed Chicken Breasts
Ingredients
- 4 Boneless and Skinless Chicken Breasts
- 2 tbsp Dijon Mustard
- 2 tbsp Ground Mustard
- 1 tbsp Olive Oil
- 1 Onion chopped
- 1 Green Apple chopped
- 1 tbsp Garlic minced
- 1/3 cup White Wine
- 8 oz Brie Cheese
- 1 tsp Thyme
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Basil
- 1 tsp Parsley
- 1 tsp Chives
Instructions
- Preheat oven to 375°.
- Cut a slit into the thickest part of each chicken breast in order to form a pocket. Set aside.
- Mix together the Dijon and ground mustard in a small bowl. Set aside.
- Heat the oil in a skillet over medium heat. Add chopped onion and sauté until golden brown.
- Add chopped apple and heaping tablespoon of minced garlic. Sauté until garlic is browned and apples are tender.
- Stir in ⅓ cup white wine and cook until liquid almost evaporates.
- Remove from heat. Stir in 4 oz of chopped brie, the herbs, and spices.
- Stuff each chicken breast with the apple and cheese mixture.
- Brush mustard mixture on both sides of stuffed chicken.
- Place chicken breasts in aluminum cooking pan or on baking sheet and drizzle with olive oil or lightly spray with cooking spray.
- Bake for 30 minutes or until chicken is nearly cooked through.*
- Approximately 5 minutes before chicken is done, add remaining brie to the top of the chicken breasts, cut into slices.*
- Remove from oven and serve hot.
- Enjoy.
Notes
