Blueberry Brie Pancakes: The Ultimate Breakfast
Step aside pre-made pancake mix, the next best homemade recipe has taken the stage. With bursts of blueberry and hints of vanilla, these will easily become a breakfast go-to for those early mornings. Whether you’re looking to amp up your weekday morning or stunt on your weekend brunch game, these delicious blueberry brie pancakes will do just the trick.
Not only are these pancakes the fluffiest flapjacks out there, but they also require minimal ingredients. Many boxed recipes contain unnecessary toxic ingredients or don’t come out as thick as they should. So we took to the drawing board and crafted our own sweet breakfast treat so all could enjoy. Now, to keep the recipe as healthy as possible, we used grass fed whole milk. This can be found at your local grocery store or local farm. The creamy milk blends together nicely with the vanilla extract flavors.
In terms of the brie, we tried out a new brand with Supreme Brie. Aside from their awesome interactive website, there are many benefits of this option. For one, the oval shape allows for the best slices. We’ve noticed some challenges in cutting the best slice of brie with wheels and wedges but this shape eliminates that issue. The brand also tends to be a tad bit cheaper from its competitors making it a good ingredient option.

Fluffy Blueberry Brie Pancakes
Ingredients
Dry Ingredients
- 1 1/2 cup Flour
- 1 tbsp Sugar
- 1 tsp Salt
- 1 tbsp Baking Powder
Wet Ingredients
- 1 1/4 cup Grass Fed Whole Milk
- 1 tsp Vanilla Extract
- 3 tbsp Coconut Oil
- 1 Egg
- 1 container Blueberries
- 8 oz Brie
Instructions
- Add all dry ingredients to a bowl and gently sift together
- Add wet ingredients and stir until a thick batter is formed
- Fold in 3/4 of the bluerries, saving extra for a garnish
- Lightly grease a non-stick griddle and add batter in palm-sized circles
- Flip, transfer to a dish, and top with sliced brie, remaining blueberries, and maple syrup if desired
Too Many Pancakes?
Not a problem! The best part of making these bad boys on the weekend is that you can bring them on the go for your early morning travels. Just pop them in the microwave and they’ll be just as good as that fresh-made batch. Refrigerated, they’ll stay fresh for 3-4 days. However, if you’d like to keep them longer, you can freeze them for up to 3 months. Just make sure you gift yourself a new brie wheel and some fresh blueberries and you’re good to go!
