How To Make Lobster Brie Mac and Cheese

Today is National Cheese Day, a day where cheese lovers from all around the world unite. In honor of this dairy-filled day, we went back to the sea and fished out a recipe you are going to fall overboard in love with. To refrain from being shellfish, this recipe includes not one, not two, but THREE cheeses. As you know, we are big fans of crabohydrates and we have made a handful of pasta dishes. So, we decided to make a mac and cheese that is shrimply the best of all. With a crabtivating trifecta of brie, cheddar, and Parmigiano-Reggiano, this recipe is something to shellebrate. Lobster Brie Mac and Cheese

Make a mac to remember with this dreamy Lobster Brie Mac and Cheese. A homemade favorite to keep the kids craving for more!

Ingredients
  

  • 1 lb Pasta
  • 4 tbsp butter grass-fed preferred (divided)
  • 1/2 White Onion chopped
  • 2 tbsp Flour
  • 2 cups Milk grass-fed preferred
  • 8 oz Cheddar Cheese block cubed (divided)
  • 8 oz Brie Wheel cubed (divided)
  • 3 tsp Dijon Mustard
  • 1 bag Frozen Langostino Lobster
  • 1 cup Panko Breadcrumbs
  • 1/4 cup Grated Parmigiano Reggiano
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°.
  • Bring a large pot of water to a boil and cook pasta until lightly firm. Drain pasta and set aside.
  • To defrost lobster, empty contents of the bag in a bowl of cold water and let sit for 15-20 minutes.
  • Meanwhile, melt 3 tablespoons of butter in a large saucepan over medium heat. Add chopped onion and let cook for 2 minutes or until onions become soft. Add flour and stir continuously for 1 minute.
  • Add milk and whisk constantly until mixture comes to a boil. Set aside 1/4 cup of cheeses combined and add the rest to the milk mixture. Add Dijon mustard and turn heat to low, stirring until all cheese is fully melted. Once melted, remove from heat entirely and stir in salt and pepper.
  • Fold in macaroni and lobster meat and pour into a large baking dish.
  • In a separate bowl, combine panko breadcrumbs, grated Parmigiano Reggiano, and remaining cheese and butter (1 tablespoon). Sprinkle evenly over dish and let cook for 20 minutes or until breadcrumbs start to brown.

Lobster Guide: What To Do

We made this recipe really simple. For those who prefer not to touch fish, these frozen mini lobsters are soon-to-be your best friend. Not only are these little guys pre-cooked, but they are very simple to prepare. All you need to do is pour the bag into a medium-sized bowl, cover the lobsters in cold water, and let sit for 15-20 minutes. It is best to do this first so by the time it comes to add them, they are fresh and ready to go.

In terms of cooking, there are two options to choose from.

  1. Toss them in when combining all ingredients to be baked in the oven
  2. Add them to a buttered skilled with desired spices for 1-2 minutes then add to pasta to be baked
    • Note: if you want to do this, be sure not to overcook as they will cook more in the oven

If lobster just isn’t your thing, you can substitute them for anything from shrimp to chicken. Whatever you prefer!

Mac Tips

The most important things to be careful of reside within the pasta cook time as well as the overall cooking. In terms of the pasta, be sure not to cook your noodles to fruition. As they will continue to cook in the oven, you want your pasta to be a bit firm but not too firm. The best key for this is to strain your pasta about 5 minutes prior to when you normally would. In addition to this, in the final cooking stages, you want the breadcrumbs to brown lightly. If it doesn’t seem like the top layer is browning, turn the broiler on for a minute. This will cook the top layer faster. If you do this, be careful not to leave your mac unattended. The broiler cooks very fast and will burn faster than you can say Brie Lobster Mac and Cheese.
