Bring a pot of water to a rolling boil. Season with salt and add linguine. Cook until al dente.
Meanwhile, add garlic and oil to a medium skillet, saucier, or sauté pan.
Add chopped onions and let cook for 5-10 minutes or until lightly caramelized.
Add white wine and 1/4 of the brie (cubed). Turn heat to low, and let simmer for an additional 10 minutes, stirring occasionally.
Cube another 1/4th of the brie and leave the rest in larger wedged. Add to pan along with the pasta, stirring constantly to melt the brie fully. Season with salt, pepper, and red pepper flakes.
Transfer to serving bowls, garnish with parsley and additional red pepper flakes. Serve immediately.
