Take puff pastry out of freezer and defrost for 15-20 minutes.
Preheat oven to 375°.
Line a baking sheet with parchment paper. Roll out puff pastry. Place brie in center and cut circle around it. Set excess puff pastry to the side.
Cover top of brie with strawberry jam and then sprinkle with some chocolate chips. Put more jam on top of the chocolate chips until they are covered. Fold pastry up around edges of brie.
Roll out the excess puff pastry you put aside. Using a serrated knife, cut the pastry into strips. Drape strips over top of brie in mummy-like fashion.
Brush brie with egg wash and bake for 20-25 minutes.
Remove from oven and let cool for 2-3 minutes. Add apple slices for eyes with a chocolate chip on each apple as a pupil.
